Delightful lemon cookies with a buttery texture that melt in your mouth, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar, divided
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and 1 cup of powdered sugar until light and fluffy.
  3. Mix in the lemon zest, lemon juice, and salt.
  4. Add the flour and cornstarch gradually until well combined.
  5. Roll the dough into small balls and place them on a greased baking sheet.
  6. Flatten each ball slightly using the bottom of a glass.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool for a few minutes, then roll each cookie in remaining powdered sugar.
