A vibrant and refreshing salad featuring orzo pasta, fresh vegetables, and a zesty lemon dressing.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth or water for cooking orzo
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package instructions in vegetable broth or water. Once tender, drain and cool the orzo in a large bowl.
  2. Combine the cooled orzo with halved cherry tomatoes, diced cucumber, finely chopped red onion, and fresh parsley in a large bowl. Stir gently to mix.
  3. Whisk together the juice of 1 lemon, olive oil, salt, and pepper until well combined in a small bowl.
  4. Toss the dressing over the salad and mix everything until coated in the lemony goodness.
  5. Garnish with crumbled feta cheese just before serving for added creaminess.

Notes

Cool the orzo completely before mixing for a crunchy texture. Feel free to customize the vegetables to your preference.
