A vibrant and refreshing salad featuring orzo pasta, cherry tomatoes, cucumbers, and a zesty lemon dressing, perfect for warm days.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, bring vegetable broth or water to a rolling boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside to cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, flat-leaf parsley, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  4. Add the cooled orzo to the vegetable mixture, and pour the dressing over the top. Toss gently to combine.
  5. Let the salad sit for a moment, then serve chilled or at room temperature.

Notes

For a gluten-free option, substitute quinoa for the orzo. Keep the dressing separate until serving to maintain crisp vegetables.
