A comforting and flavorful Lemon Roasted Chicken infused with zesty lemon and aromatic herbs, perfect for family gatherings.

Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 4 tablespoons olive oil
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 onion (cut into quarters)
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the lemon juice, lemon zest, minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. Place the chicken in a roasting pan and rub the lemon mixture all over the chicken.
  4. Stuff the onion quarters inside the chicken.
  5. Pour the chicken broth into the bottom of the roasting pan.
  6. Roast for 1 hour and 15 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving, then slice, serve, and enjoy!

Notes

Pair with roasted vegetables, creamy mashed potatoes, or a fresh salad. Store leftovers in an airtight container for up to 3 days or freeze for a month.
