Delightful festive cookies decorated to resemble whimsical leprechaun hats, perfect for St. Patrick’s Day celebrations.

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Green frosting
  • Chocolate cookies or Oreos
  • Chocolate candy or candies for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually blend the dry mixture into the creamed butter and sugar until just combined.
  5. Roll the dough into balls and place them on a lined baking sheet.
  6. Bake cookies for 8 to 10 minutes, until golden brown around the edges.
  7. Let the cookies cool completely on a wire rack.
  8. Spread green frosting on each cookie, add a chocolate cookie on top as the hat brim, and decorate with chocolate candies.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze baked cookies for up to three months, using parchment paper between layers.
