A healthy twist on classic nachos, these Loaded Cauliflower Nachos are packed with flavor and guilt-free indulgence.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced jalapeños
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 20-25 minutes until tender and starting to crisp.
  4. Remove the cauliflower from the oven and sprinkle with shredded cheese, crispy bacon, and jalapeños. Return to the oven for 5-7 minutes to melt the cheese.
  5. Top off with sour cream, green onions, and cilantro. Serve warm.

Notes

For an extra kick, marinate the cauliflower in spices for a few hours before roasting. Experiment with different cheeses or swap bacon for nutritional yeast for a vegan option.
