A comforting and hearty dish featuring fluffy baked potatoes topped with savory taco-seasoned meat, black beans, corn, tomatoes, and avocado.

Ingredients

  • 2 large potatoes
  • 1 cup cooked ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • Sour cream (for topping)
  • Fresh cilantro (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes under running water; prick them with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes until tender.
  4. Heat a skillet over medium heat, add the cooked ground beef or turkey, and mix in the taco seasoning.
  5. Remove the potatoes from the oven, let them cool slightly, then slice them open and fluff the insides.
  6. Top the potatoes with the seasoned meat mixture, then add black beans, corn, diced tomatoes, and cheese.
  7. Garnish with diced avocado and sour cream, then sprinkle with fresh cilantro, salt, and pepper to taste.

Notes

For crispy potato skins, rub the outside with olive oil and a sprinkle of salt before baking. Can be made vegetarian by omitting the meat.
