  • 4 medium Potatoes
  • 1 lb Ground meat (beef, chicken, or turkey)
  • 2 tbsp Taco seasoning
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Sour cream
  • 1 Avocado, sliced
  • 1 can Black beans, rinsed and drained
  • 1 cup Corn
  • Fresh vegetables (lettuce, tomatoes, etc.)
  • Tortilla chips (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice the potatoes into bite-sized pieces and toss them with olive oil, salt, and black pepper.
  3. Spread the potatoes out on a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  4. Heat a skillet over medium-high heat and brown the ground meat, adding taco seasoning as directed.
  5. Layer the bowls with roasted potatoes, cooked meat, black beans, corn, and fresh vegetables.
  6. Top with cheddar cheese, sliced avocado, and a dollop of sour cream.

Notes

Store leftover components separately in airtight containers. Roasted potatoes are best eaten fresh for crispiness.
