A luxurious and comforting dish combining succulent lobster meat and tender vegetables under a flaky puff pastry lid.

Ingredients

  • 2 cups cooked lobster meat, chopped
  • 1 cup heavy cream
  • 1/2 cup lobster broth
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup frozen peas and carrots mix
  • 1/2 cup diced onion
  • 1 tsp garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the diced onion and minced garlic in melted butter over medium heat until translucent and fragrant, about 3-4 minutes.
  3. Create the base by stirring in the flour and cooking for 1 minute, then gradually whisk in the lobster broth and heavy cream until smooth and thickened.
  4. Add the lobster meat, frozen peas, carrots, thyme, salt, and pepper, mixing well and removing from heat.
  5. Assemble the pie by pouring the lobster mixture into a pie dish.
  6. Prepare the puff pastry by rolling it out over the filling, trimming excess, and cutting slits for steam to escape.
  7. Bake for 25-30 minutes or until the pastry is golden brown and flaky.
  8. Cool for a few minutes before serving.

Notes

For a different flavor, add diced chives or dill. Leftovers can be refrigerated in an airtight container for up to 3 days.
