A delightful twist on the classic cheesecake, marrying zesty lemon-lime flavors with a creamy filling, topped with cherry pie filling and crunchy pistachios.

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup pistachios, chopped
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup sour cream
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 1 teaspoon vanilla extract
  • 1 can cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed graham crackers, melted butter, and 1/2 cup chopped pistachios.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth.
  5. Add sour cream, lemon juice, lime juice, and vanilla extract; mix until well combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 40-45 minutes until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours.
  9. Once chilled, top with cherry pie filling and the remaining pistachios before serving.

Notes

Make sure your cream cheese is softened to room temperature for a smoother filling. Store leftovers in the refrigerator for up to 5 days.
