A delightful dessert capturing the essence of summer with a sweet blueberry filling and a flaky crust.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 prepared pie crust or graham cracker crust
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and salt in a medium saucepan over medium heat.
  3. Once thickened, remove from heat and stir in the vanilla extract.
  4. Pour the blueberry mixture into your prepared crust, spreading it evenly.
  5. Bake for about 25-30 minutes until the crust is golden and the filling is bubbly.
  6. Let it cool for a few minutes on a wire rack.
  7. Serve with a generous dollop of whipped cream.

Notes

For an extra thick filling, allow it to cook longer. You can also use frozen blueberries without thawing.
