A vibrant and flavorful dish combining tender chicken with juicy mango, perfect for a quick weeknight dinner.

  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat, allowing it to warm up and shimmer.
  2. Add the minced garlic and chopped onion to the skillet, sautéing until they become translucent and fragrant.
  3. Season the chicken breasts generously with salt and pepper, then place the chicken in the skillet, cooking until browned on both sides, about 6-8 minutes per side.
  4. Next, add the diced mango and red bell pepper to the skillet, cooking together for another 3-4 minutes.
  5. Drizzle the dish with fresh lime juice and give it a gentle toss.
  6. Garnish your Mango Chicken with freshly chopped cilantro before serving.
