Mango Mochi brings the tropical burst of mango to a delightful chewy treat that’s perfect for summer.

Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup sugar
  • 1 cup water
  • 1/2 cup mango puree
  • Cornstarch (for dusting)
  • Mango chunks (for filling, optional)

Instructions

  1. In a mixing bowl, combine the glutinous rice flour and sugar.
  2. Gradually add water while stirring until the mixture is smooth.
  3. Fold in the mango puree until evenly incorporated.
  4. Pour the mixture into a microwave-safe dish.
  5. Cover with plastic wrap and microwave for 1 minute, stir, then microwave again for another minute.
  6. Continue microwaving in 1-minute intervals, stirring until sticky and slightly translucent, about 2-3 more minutes.
  7. Dust a clean surface with cornstarch and pour the mochi onto it.
  8. Let it cool slightly, dust hands with cornstarch, and shape into small balls or disks.
  9. If desired, place a piece of mango in the center of each to create filled mochi.
  10. Let mochi cool completely before serving.

Notes

Store leftover mochi in an airtight container for up to 3 days at room temperature or in the refrigerator for a week.
