A delightful dessert featuring sweet mangoes, creamy coconut milk, and tender sticky rice, reminiscent of Southeast Asia’s street food.

Ingredients

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, sliced
  • Sesame seeds or mung beans for garnish

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak for at least 4 hours, preferably overnight.
  2. Steam the drained rice in a bamboo steamer for about 30 minutes until tender and sticky.
  3. Prepare the coconut milk mixture by heating coconut milk, sugar, and salt in a saucepan over medium heat until sugar dissolves.
  4. Combine the steamed rice with half of the coconut milk mixture, stirring gently, and let sit for 15 minutes.
  5. Serve the sticky rice on plates, topped with sliced mango and drizzled with the remaining coconut milk mixture.
  6. Garnish with sesame seeds or mung beans before serving.

Notes

Soaking the rice overnight yields the best texture. Adjust sweetness to your preference; use less sugar if desired.
