  • 1 pound Brussels sprouts, trimmed and halved
  • 4 carrots, peeled and sliced
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the sweet potatoes, Brussels sprouts, and carrots in a large bowl.
  3. Drizzle the mixture with olive oil and maple syrup, then season with salt and pepper.
  4. Toss until all vegetables are well coated.
  5. Spread the vegetables in a single layer on a baking sheet.
