A colorful platter of marinated olives and feta cheese that captures the essence of Mediterranean flavors.

Ingredients

  • 1 cup mixed olives
  • 1 cup feta cheese, cubed
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Whisk the marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, red pepper flakes, and black pepper until smooth and well combined.
  2. Prepare the olives and feta: Place the mixed olives and cubed feta cheese in a medium-sized airtight container.
  3. Pour the marinade over ingredients: Pour the luscious marinade over the olives and feta, making sure to coat everything evenly.
  4. Add fresh herbs: Tuck in the fresh rosemary and thyme sprigs among the olives and feta.
  5. Seal and refrigerate: Seal the container tightly and refrigerate for at least 2 hours, preferably overnight.
  6. Serve with love: Remove from the refrigerator 20 minutes before serving, gently stir, and enjoy.

Notes

For extra flavor, add a splash of red wine vinegar to the marinade. Different types of olives can be used for variety.
