A vibrant and refreshing salad celebrating ripe tomatoes, dressed with olive oil, balsamic vinegar, and fresh herbs.

Ingredients

  • 1 pound ripe tomatoes, cut into thick slices
  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 0.25 teaspoon grated garlic
  • 1 tablespoon chopped basil leaves
  • 1 tablespoon chopped parsley leaves
  • 0.5 teaspoon fine salt
  • Freshly ground pepper (to serve)

Instructions

  1. Prepare the tomatoes by slicing them into thick, inviting slices.
  2. Make the dressing by combining olive oil, balsamic vinegar, grated garlic, and fine salt in a bowl and whisking until well combined.
  3. Toss the dressing over the sliced tomatoes and gently coat them.
  4. Let the salad marinate for about 10 minutes to allow the flavors to mingle.
  5. Serve with freshly ground pepper sprinkled on top.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to 24 hours.
