  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes.
  3. Add chicken to the skillet—cook for about 6-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Add sun-dried tomatoes, spinach, and Parmesan cheese.
  7. Bring to a simmer and cook for about 5 minutes until the sauce thickens.
  8. Return chicken to the skillet, spoon sauce over chicken, and cook for another 2-3 minutes to meld the flavors.
  9. Garnish with fresh basil before serving to add a final touch of freshness.

Notes

For a fresh twist, add a squeeze of lemon juice before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
