A warm and creamy soup that’s become a staple for cozy evenings and dinner parties, known for its rich flavors and comforting texture.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups baby spinach
  • 1 cup cooked chicken, shredded (optional)
  • Grated Parmesan cheese for serving

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  2. Add the veggies: Toss in the diced carrots and celery, cooking for another 5-7 minutes until they soften.
  3. Bring it all together: Stir in the diced tomatoes, vegetable broth, thyme, basil, salt, and pepper, and bring everything to a simmer.
  4. Let it simmer: Allow the soup to simmer for 15-20 minutes.
  5. Add cream and spinach: Stir in the heavy cream and spinach, adding cooked chicken if desired.
  6. Heat through: Cook for an additional 5 minutes until the spinach wilts and everything is heated through.
  7. Serve with love: Serve hot, topped with grated Parmesan cheese.

Notes

Great paired with crusty bread or a fresh salad. Can be refrigerated for up to 3 days or frozen for up to 2 months.
