Ingredients

  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine egg whites and sugar in a heatproof bowl.
  2. Heat the bowl over a pot of simmering water, whisking continuously until the mixture reaches 160°F (71°C).
  3. Add cream of tartar and stir in.
  4. Beat the mixture on high speed until glossy peaks form, about 5-7 minutes.
  5. Finish by stirring in vanilla extract.
  6. Frost your favorite cupcakes, cakes, or cookies immediately.

Notes

For best results, use fresh, room temperature egg whites and ensure your bowl is clean and free of grease.
