  • 3 pounds Yukon Gold potatoes
  • 1 pound russet potatoes
  • 6 tablespoons salted butter
  • 4 garlic cloves, finely minced
  • ¾ cup milk
  • ½ cup sour cream
  • 2 to 4 tablespoons prepared horseradish (adjust to taste)
  • 1 ¼ teaspoons kosher salt
  • Chopped fresh chives, for garnish

Instructions

  1. Prepare your potatoes: Wash and chop the potatoes into even 1-inch chunks.
  2. Boil the potatoes: Place the chopped potatoes in a large pot, cover with water, and bring to a boil. Let them cook until tender, about 10-15 minutes.
  3. Drain & steam: Drain the potatoes and allow them to steam for a few minutes.
  4. Sauté the garlic: In the same pot, melt the butter over medium heat and sauté the minced garlic until fragrant.
  5. Combine milk and mash: Stir in the milk, then return the drained potatoes to the pot. Mash them until creamy.
  6. Mix in the creamy goodness: Mix in the sour cream, horseradish, and remaining salt, tasting as you go.
  7. Fluff for texture: Transfer the potatoes to a stand mixer and beat for 1-2 minutes.
  8. Serve with style: Transfer the mashed potatoes to a serving dish and garnish with freshly chopped chives.

Notes

For a vegan version, substitute butter with margarine and sour cream with cashew cream or vegan yogurt.
