  • 1 cup plain Greek yogurt

  • 1/2 cucumber, grated and drained
  • 1 tablespoon fresh dill, chopped

  • 4 pita bread rounds
  • 1 cup shredded lettuce
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken: In a large bowl, combine the olive oil, lemon juice, minced garlic, cumin, smoked paprika, oregano, salt, and black pepper. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 1 hour, but if you can manage to wait, overnight is ideal.
  2. Grill the chicken: Preheat your grill or stovetop grill pan over medium-high heat. Once hot, cook the marinated chicken for about 5-7 minutes on each side until fully cooked and slightly charred. This makes it juicy and packed full of flavor! Remove from heat and allow it to rest for a few minutes before slicing.
  3. Prepare the creamy feta tzatziki: In a separate bowl, combine the Greek yogurt, crumbled feta cheese, grated cucumber (make sure to squeeze out any excess water), fresh dill, salt, and pepper. Mix until well combined and refrigerate until you’re ready to use it.
  4. Warm the pita bread: Warm the pita bread rounds on the grill or in a pan for 1-2 minutes until they’re soft and pliable.
  5. Assemble the gyros: Spread a generous spoonful of creamy feta tzatziki on each pita round. Add slices of grilled chicken, a handful of shredded lettuce, sliced red onion, and fresh tomato. Garnish with parsley if you’re feeling fancy!
  6. Wrap and serve: Wrap each gyro neatly in parchment paper or foil for easier handling, and voilà, they’re ready to serve!
