A quick and healthy Mediterranean Chicken Stir Fry featuring juicy chicken, colorful veggies, and aromatic herbs.

Ingredients

  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the onion and garlic, sautéing until the onion becomes translucent.
  4. Stir in the bell pepper, zucchini, and cherry tomatoes.
  5. Season with oregano, basil, salt, and pepper.
  6. Cook for an additional 5-7 minutes, or until the vegetables are tender.
  7. Garnish with fresh parsley before serving.

Notes

Serve over quinoa or brown rice. Can be stored for up to 3 days in the fridge or frozen for up to 3 months.
