A vibrant and flavorful pasta salad that celebrates Mediterranean ingredients, perfect for picnics or light meals.

Ingredients

  • 8 oz pasta (e.g., fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain it and let it cool completely.
  2. Combine the cooled pasta, halved cherry tomatoes, diced cucumber, chopped red onion, sliced black olives, and crumbled feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a smaller bowl.
  4. Dress the pasta salad by pouring the dressing over it and tossing gently.
  5. Garnish with fresh basil if desired.
  6. Serve chilled, or refrigerate before serving.

Notes
