A vibrant and colorful Mediterranean dish featuring quinoa, fresh vegetables, and feta cheese, perfect for summer gatherings.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and Prepare Quinoa: Begin by rinsing the quinoa under cold water. In a pot, combine the rinsed quinoa with water or broth. Bring it to a boil, reduce the heat to low, and let it simmer for about 15 minutes. Fluff with a fork and set aside to cool.
  2. Combine Fresh Ingredients: In a large bowl, combine the cooled quinoa with cherry tomatoes, cucumber, bell pepper, red onion, kalamata olives, feta cheese, and parsley.
  3. Whisk the Dressing: In a small bowl, whisk together olive oil, lemon juice, and a sprinkle of salt and pepper.
  4. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Customize with seasonal veggies or herbs.
