A vibrant Mediterranean Quinoa Salad packed with colorful ingredients and bright flavors, perfect as a refreshing side dish or a hearty main course.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, combine the washed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until fluffy.
  2. Combine the cooked quinoa, diced cucumber, halved cherry tomatoes, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and fresh parsley in a large bowl. Stir gently to mix.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Dress the salad with the dressing and toss everything together until evenly coated. Serve chilled or at room temperature.

Notes

Always rinse quinoa to remove bitterness. Adjust ingredients as desired, and let the salad sit for 30 minutes after dressing for the best flavor.
