A colorful medley of fresh greens, veggies, and feta drizzled with a zesty dressing that celebrates Mediterranean flavors.

Ingredients

  • 2 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)

Instructions

  1. Combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese in a large bowl.
  2. Whisk together the olive oil, lemon juice, salt, pepper, and oregano (if using) in a small bowl.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes to meld flavors.

Notes

Pair with grilled chicken or roasted lamb. For vegan, omit feta or replace with plant-based cheese.
