A refreshing and hearty salad featuring marinated flank steak, fresh vegetables, and a zesty dressing, perfect for summer picnics.

Ingredients

  • 1 pound flank steak
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced

Instructions

  1. Preheat the grill to medium-high heat. While it’s warming up, rub the flank steak with olive oil, salt, and pepper.
  2. Place the steak on the grill and cook for 5-7 minutes on each side for medium-rare or until desired doneness. Let it rest for 5 minutes before slicing.
  3. In a large bowl, combine the mixed salad greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
  4. Whisk together the red wine vinegar, lemon juice, dried oregano, minced garlic, and salt and pepper in a small bowl.
  5. Drizzle the dressing over the salad mixture and toss gently. Top with sliced steak and serve immediately.

Notes

Store leftovers in an airtight container for up to 3 days; dress just before serving to maintain freshness.
