Delightful Mediterranean Egg Bites made with fresh veggies and creamy feta, perfect for brunch or as a nutritious snack.

  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano

Instructions

  1. Preheat your oven to 350°F (175°C) and gather your muffin tin. Lightly grease the cups to prevent sticking.
  2. Whisk the eggs in a large mixing bowl with salt, black pepper, garlic powder, and oregano until combined and frothy.
  3. Chop the bell peppers, spinach, and halve the cherry tomatoes. Fold them along with crumbled feta into the egg mixture.
  4. Pour the egg mixture into each muffin cup, filling them about three-quarters full.
  5. Bake for 15-20 minutes, or until puffed up and a toothpick comes out clean.
  6. Cool for a few minutes, then run a knife around the edges to loosen them from the tin, and carefully lift them out.

Notes

These egg bites are great on their own but pair well with a fresh green salad or whole-grain bread.
