An easy yet sophisticated dish that encapsulates dreamy Mediterranean moments. With creamy feta, sun-dried tomatoes, and briny olives, this pasta transforms any meal into a celebration.

Ingredients

  • Pasta (Penne, Fusilli, or Gluten-Free)
  • Sun-Dried Tomatoes
  • Minced Garlic
  • Kalamata or Green Olives
  • Feta Cheese (Crumbled)
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Fresh Basil (Optional)

Instructions

  1. Boil the Pasta: Fill a large pot with water and add a generous amount of salt. Bring it to a rolling boil and cook your chosen pasta until it reaches that perfect al dente texture. Drain thoroughly, but make sure to reserve a bit of that starchy pasta water.
  2. Prepare the Olive Oil: In a skillet, pour in extra virgin olive oil and bring the heat to medium.
  3. Sauté the Garlic: Add the minced garlic to the hot oil, letting it sauté for about 30 seconds until it becomes fragrant.
  4. Add Sun-Dried Tomatoes and Olives: Stir in the sun-dried tomatoes and your choice of olives, cooking them for about 2-3 minutes.
  5. Combine with Pasta and Feta: Add the drained pasta and crumbled feta cheese to the skillet. Toss everything together.
  6. Adjust for Flavor: Season your creation with salt and black pepper to taste. Drizzle in some reserved pasta water if sauce is too dry.
  7. Serve and Garnish: Serve your Mediterranean Pasta warm, drizzling a little extra olive oil on top and folding in fresh basil if you choose.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This pasta can be made vegan and gluten-free, depending on ingredient choices.
