A refreshing mocktail infused with coconut water, pineapple juice, and butterfly pea flower tea, perfect for summer gatherings.

Ingredients

  • 1 cup coconut water
  • 1/2 cup pineapple juice
  • 1/4 cup lemonade
  • 1 teaspoon butterfly pea flower tea
  • 1 tablespoon hot water
  • 1 teaspoon agave syrup
  • 1 tablespoon lime juice
  • 4 mint leaves
  • 1/2 cup sparkling water
  • 1 cup ice cubes
  • 1 pinch edible glitter

Instructions

  1. Steep the butterfly pea flower tea in hot water for about 3 minutes. Strain and set aside.
  2. Combine coconut water, pineapple juice, lemonade, agave syrup, and lime juice in a pitcher. Stir well.
  3. Add the brewed butterfly pea flower tea to the juice mixture and stir until the color is uniform.
  4. Muddle the mint leaves in the pitcher to release their oils.
  5. Fill glasses with ice cubes and pour the mocktail mixture halfway.
  6. Top with sparkling water for a layered effect.
  7. Sprinkle in edible glitter and stir gently.
  8. Garnish with a sprig of mint and a lime wheel before serving.

Notes

For extra sweetness, adjust the agave syrup. Fresh pineapple can be used instead of juice.
