A delightful fusion of traditional lentil stew infused with vibrant Mexican flavors, packed with protein and fiber.

Ingredients

  • 1 cup lentils (rinsed under cold water)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 carrots, diced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth

Instructions

  1. Prepare the ingredients by rinsing the lentils and chopping the vegetables.
  2. Sauté the aromatics in olive oil until the onion is translucent.
  3. Add the diced bell pepper and carrots, cooking until softened.
  4. Sprinkle in the chili powder and cumin, stirring to meld the flavors.
  5. Combine the lentils, diced tomatoes, and vegetable broth in the pot.
  6. Simmer the mixture until the lentils are tender, about 25-30 minutes.
  7. Season with salt and pepper to taste before serving.
  8. Serve in bowls garnished with cilantro, avocado, or lime if desired.
