A vibrant and flavorful pasta dish inspired by the flavors of Mexican street corn, featuring creamy dressing, charred corn, and tangy feta.

Ingredients

Scale
  • 8 oz pasta (any type)
  • 2 cups corn (fresh or frozen)
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, making sure to save a little pasta water for later, just in case you need to loosen up the final dish.
  2. Sauté the corn by heating olive oil in a skillet over medium heat and adding corn. Sauté until slightly charred, about 5-7 minutes.
  3. Mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a large bowl.
  4. Combine the cooked pasta and charred corn with the dressing and toss until well-coated.
  5. Fold in crumbled feta cheese gently.
  6. Garnish with freshly chopped cilantro before serving.

Notes

For extra charred flavor, broil the corn in the oven after sautéing. You can substitute mayonnaise for Greek yogurt to reduce calories.
