A vibrant and creamy Mexican Street Corn Salad that captures the essence of summer gatherings with sweet corn, zesty lime, and cotija cheese.

  • 4 cups corn (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese (crumbled)
  • 1/4 cup cilantro (chopped)
  • 1 lime (juiced)
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the corn: If using fresh corn, grill it until it’s charred. For frozen corn, cook it as per package instructions and let it cool.
  2. Mix the ingredients: In a large bowl, combine corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
  3. Toss to combine: Use a large spoon to toss all ingredients together until well mixed and coated.
  4. Serve or chill: Serve immediately, or refrigerate for about an hour to meld flavors.

Notes
