Delightful Meyer Lemon Bars with a buttery crust and tangy lemon filling, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup Meyer lemon juice
  • Zest of 1 Meyer lemon
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper, allowing the edges to hang over for easy removal later.
  2. Cream together the softened butter and powdered sugar until smooth. Gradually mix in the flour to form a crumbly mixture and press it into the bottom of the prepared pan.
  3. Bake the crust in the preheated oven for about 15 minutes until it turns lightly golden.
  4. Whisk together the eggs, granulated sugar, Meyer lemon juice, lemon zest, and baking powder until blended and smooth.
  5. Pour this lemony mixture over the baked crust, spreading it evenly for a beautiful presentation.
  6. Return to the oven and bake for an additional 20-25 minutes until set.
  7. Allow to cool completely in the pan. Once cooled, dust with powdered sugar before cutting into squares and serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. Refrigerate for about a week or freeze for up to 3 months.
