  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans (optional)
  • Cream cheese frosting (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press the mixture into the bottom of a muffin tin lined with paper liners.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1/2 cup sugar and vanilla extract, mixing until creamy.
  4. Add the eggs one at a time, mixing well after each addition until fully incorporated.
  5. Stir in cinnamon and brown sugar. If using, fold in chopped pecans for a delightful crunch.
  6. Pour the cream cheese mixture over the crust in each muffin cup, filling them about 3/4 full.
  7. Bake for 20-25 minutes, until the centers are set but slightly jiggly.
  8. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours for the flavors to meld.
  9. Before serving, generously top with cream cheese frosting.
