Deliciously fudgy mint brownies topped with vibrant green frosting, combining rich chocolate and refreshing peppermint.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup peppermint extract
  • 1 cup chocolate chips
  • 1 cup green frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, melt the butter. Stir in the sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, mix together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in the peppermint extract and chocolate chips.
  5. Pour the batter into the prepared baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the brownies to cool before spreading the green frosting on top.

Notes

Serve warm with vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
