  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup Baileys Irish Cream
  • 1/2 teaspoon peppermint extract
  • 2 cups whipped cream
  • 1 cup chocolate chips
  • 1/4 cup green food coloring (optional)
  • Chocolate shavings or mint for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine graham cracker crumbs and melted butter in a bowl and press into the bottom of the prepared pan to create a crust.
  3. Beat cream cheese and powdered sugar in a mixing bowl until smooth and creamy.
  4. Add Baileys Irish Cream and peppermint extract to the mixture and blend until fluffy.
  5. Gently fold in whipped cream until well incorporated.
  6. If desired, mix in green food coloring until evenly colored.
  7. Fold in chocolate chips to ensure an even distribution in the cheesecake mixture.
  8. Pour the mixture over the crust, smoothing the top evenly.
  9. Refrigerate for at least 4 hours until set.
  10. Cut into bars and garnish with chocolate shavings or fresh mint leaves before serving.

Notes
