  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups mint chocolate chips
  • 1/2 teaspoon peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
  4. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually blend it into the creamed mixture until just combined.
  5. Gently fold in the mint chocolate chips.
  6. Drop rounded teaspoonfuls of cookie dough onto ungreased baking sheets.
  7. Bake for 9-11 minutes, or until edges are lightly browned.
  8. Allow to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
