  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mint chocolate kisses, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the two large eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, cocoa powder, baking soda, and salt. Gradually mix into the creamed mixture until just incorporated.
  5. Roll the dough into 1-inch balls and place them on ungreased baking sheets.
  6. Bake for 8-10 minutes until soft in the center.
  7. Remove from the oven and press a mint chocolate kiss into the center of each cookie.
  8. Let the cookies cool on wire racks.
