A delightful combination of creamy and savory flavors wrapped in tender crêpes, perfect for a cozy family dinner or an elegant brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 1 tablespoon melted butter
  • Salt to taste
  • 1 cup cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 1/2 cup cream
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 30 minutes.
  2. In a skillet over medium heat, sauté the mushrooms until golden. Add the cooked chicken, cream, chicken broth, salt, and pepper. Simmer until thickened slightly.
  3. In a separate skillet, heat some butter and pour in a ladle of crêpe batter. Cook for 1-2 minutes on each side until golden. Repeat with the remaining batter.
  4. Fill each crêpe with the creamy chicken and mushroom mixture and serve garnished with fresh parsley.

Notes

These crêpes can be enjoyed solo or paired with a light salad. Leftovers can be refrigerated for up to 2 days or frozen for up to 2 months.
