Delightful stuffed mashed potato nests filled with savory beef and melted cheese, offering a modern twist on classic comfort food.

Ingredients

  • 35 large potatoes (about 4 cups mashed)
  • 3.5 tbsp butter (melted)
  • Salt
  • Smoked paprika
  • Black pepper
  • Oregano (to taste)
  • Fresh dill (chopped, for garnish)
  • 1.1 lbs ground beef
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (diced)
  • 1 large tomato (diced)
  • 2.5 oz tomato paste
  • 3.5 oz mozzarella cheese (shredded)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the potatoes: Peel and chop them into evenly sized chunks, cover with cold water, add a pinch of salt, and boil until tender (about 15 minutes).
  2. Mash and season: Drain the potatoes, return to the pot, add melted butter, salt, smoked paprika, black pepper, and oregano, then mash until creamy and smooth.
  3. Preheat your oven to 375°F (190°C) and grease a muffin tin lightly with cooking spray.
  4. Portion out the mashed potatoes into the muffin cups, pressing down in the center to form a nest shape.
  5. Sauté the onion and garlic in a skillet over medium heat until fragrant, then add the ground beef and cook until browned.
  6. Drain any excess grease, stir in the red bell pepper, diced tomato, and tomato paste, and season with salt, pepper, and oregano. Let simmer until thickened (5-7 minutes).
  7. Mix in the shredded mozzarella cheese with the beef filling, then spoon generously into each potato nest.
  8. Bake in the oven for around 20 minutes, or until the tops are golden brown and the cheese is bubbly.
  9. Garnish each nest with chopped fresh dill and parsley before serving.

Notes

Feel free to personalize the filling with your choice of meat or vegetables. Leftovers can be stored for up to 3 days in an airtight container.
