A vibrant blend of fresh greens, tender potatoes, and savory ingredients inspired by the south of France.

Ingredients

  • Mixed salad greens
  • Cherry tomatoes
  • Cucumbers
  • Green beans
  • Potatoes
  • Hard-boiled eggs
  • Canned tuna
  • Kalamata olives
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt
  • Pepper

Instructions

  1. Boil potatoes until tender, then slice them into rounds.
  2. Blanch green beans in salted water until bright green and crunchy.
  3. Arrange mixed salad greens on a large platter.
  4. Top the greens with cherry tomatoes, sliced cucumbers, green beans, potato slices, halved hard-boiled eggs, tuna, and olives.
  5. Drizzle with olive oil and red wine vinegar. Season with salt and pepper. Toss gently or serve as is.
