A creamy, fruity, and indulgent no-bake cheesecake with a buttery graham cracker crust, topped with fresh mixed berries.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy whipping cream

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9×9 inch pan to form the crust.
  2. In a separate bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Pour the cream cheese mixture over the crust and spread evenly.
  5. Top with mixed berries, arranging them as desired.
  6. Refrigerate for at least 4 hours or until set.
  7. Once set, cut into squares and serve chilled.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Can be made gluten-free with appropriate substitutes.
