Instructions

  1. Prepare the Crust: In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Cream the Cheese: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, vanilla extract, and lemon juice, mixing until well combined.
  3. Whip the Cream: In another bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Pour and Spread: Pour the cheesecake filling over the crust and spread it evenly.
  5. Chill Out: Refrigerate for at least 4 hours or until set.
  6. Slice and Serve: Slice and serve chilled, optionally topped with lemon zest or berries.
