Delightful no-bake cheesecake bars inspired by the classic shamrock shake, perfect for St. Patrick’s Day celebrations!

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1/2 tsp peppermint extract
  • Green food coloring
  • 1 cup whipped topping
  • 1 package of graham crackers, crushed
  • 1/2 cup unsalted butter, melted
  • Chocolate syrup (for drizzling, optional)
  • Whipped cream (for topping, optional)

Instructions

  1. In a mixing bowl, combine crushed graham crackers and melted butter until well mixed. Press into the bottom of an 8 x 8 inch baking dish to form a crust.
  2. Beat softened cream cheese until smooth. Add powdered sugar, milk, peppermint extract, and green food coloring, mixing until well combined.
  3. Gently fold in whipped topping into the cream cheese mixture until no streaks remain.
  4. Pour the creamy mixture over the crust and spread evenly.
  5. Refrigerate for at least 4 hours or until set.
  6. Once set, cut into bars, drizzle with chocolate syrup, and top with whipped cream if desired. Serve cool and enjoy!
