  • 12 oz wide egg noodles
  • 1 cup sour cream
  • 1½ cups cottage cheese
  • ½ cup granulated sugar
  • 5 eggs
  • ½ cup butter (melted)
  • ½ tsp salt
  • ¼ tsp nutmeg
  • 3 cups cornflakes (lightly crushed)
  • 6 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • ½ tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 baking dish with nonstick spray.
  2. Cook the egg noodles in boiling water until al dente, about 6-8 minutes. Drain the noodles and set aside.
  3. Combine sour cream, cottage cheese, granulated sugar, eggs, melted butter, salt, and nutmeg in a large mixing bowl. Mix until smooth and creamy.
  4. Fold the cooked noodles into the filling mixture, ensuring every noodle is coated.
  5. Pour the noodle mixture evenly into the prepared baking dish, spreading it out.
  6. Prepare the cornflake topping by mixing crushed cornflakes with melted butter, granulated sugar, and cinnamon.
  7. Sprinkle the cornflake mixture generously over the noodle mixture.
  8. Bake uncovered for 60-65 minutes, or until the top is golden brown and the filling is set.

Notes

For added sweetness, consider adding raisins or chopped apples into the noodle mixture. This dish can be enjoyed cold or reheated.
