  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. Cream together the softened butter and granulated sugar until light and fluffy for about 3-5 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Alternate adding the flour mixture and buttermilk into the batter, starting and ending with the flour mixture.
  7. Pour the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  10. Beat together cream cheese, softened butter, and vanilla until smooth, then gradually add powdered sugar until fluffy for the frosting.
  11. Frost the cooled cake layers with the frosting.
  12. Slice your cake and enjoy!

Notes

For a lighter cake, ensure your butter is at room temperature but not too soft. You can add chopped nuts or raisins for extra texture.
