A comforting fusion of fluffy rice tucked within a delicate omelet, reminiscent of childhood memories.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1/2 cup cooked chicken, diced
  • 1/4 cup onion, finely chopped
  • 1/4 cup peas and carrots
  • 2 tablespoons ketchup
  • Salt and pepper to taste

Instructions

  1. Sautéing the Onions: In a pan, heat a little oil and sauté the onions until they become translucent and fragrant.
  2. Bringing the Filling Together: Add the cooked chicken, peas, and carrots to the pan. Keep the heat on medium and cook until everything is heated through.
  3. Mixing in the Rice: Stir in the cooked rice and the ketchup. Season with salt and pepper to taste.
  4. Whisking the Eggs: In a bowl, whisk the eggs and season them lightly with salt.
  5. Cooking the Omelet: In a separate pan, heat some oil and pour in the whisked eggs, swirling them gently to form an even omelet.
  6. Final Assembly: Once the omelet is nearly cooked through, carefully place your fried rice mixture in the center and gently fold the omelet over the rice.
  7. Serving the Omurice: Slide the Omurice onto a plate and serve immediately.

Notes
