One-Pan Lemon Feta Chicken and Orzo

A delightful one-pan meal featuring tender chicken, tangy lemon, and creamy feta, perfect for a quick and flavorful dinner.

Ingredients

  • 4 Chicken breasts
  • 1 cup Orzo pasta
  • 2 tablespoons Olive oil
  • Juice of 1 Lemon
  • 2 cups Fresh spinach
  • 1 cup Feta cheese, crumbled
  • 3 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 2 cups Vegetable or chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Season chicken breasts with salt and pepper, then sear them in the skillet until golden brown, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside on a plate.
  4. In the same skillet, add minced garlic and sauté until fragrant.
  5. Stir in the orzo and broth, bringing to a simmer, and cook until the orzo is tender, about 10-12 minutes.
  6. Add fresh spinach and stir until wilted into the warm pasta.
  7. Return the chicken to the skillet, squeeze fresh lemon juice, and crumble feta cheese over the top.
  8. Serve warm, garnished with additional lemon slices if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of broth.
